Nutella Buttercream Frosting

Nutella, the delectable chocolate and hazelnut spread, is a favorite in my family.  My sister and I grew up on the chocolaty elixir and we’ve found many ways to use it throughout the years.  One of my favorite use for Nutella is in frosting that can be used on cakes or cupcakes.

Ingredients:

  • 2 sticks (1/2 cup) butter, softened
  • 3/4 cup Nutella
  • 1 cup confectioner’s sugar
  • 2 Tbsp. milk

Directions:

  1. In the bowl of an electric mixer, cream the butter until light and fluffy, about 2 minutes.
  2. Add the Nutella to the butter and beat to fully incorporate (resist the urge to stick your finger in for a taste).
  3. On low speed, add the confectioner’s sugar, and beat to combine, about 1 minute.
  4. Add the milk, adding more if too stiff to use as frosting.

Makes about 2 cups.

 

 

Strawberry Nutella Treats

Strawberry Nutella Treats

Strawberry season’s in full force and I can’t think of anyone who loves the little red gems more than my sister, Josée.  When her and her family visited me in New Jersey last, I, of course, had bought strawberries for her.  To my delight, my two nieces have inherited her love for strawberries and here’s a quick but special treat she fixed them one morning.

Ingredients:

  • 2 slices white bread (could use whole wheat)
  • 2 Tbsps. Nutella, hazelnut spread
  • 4 large strawberries, hulled and thinly sliced

Directions:

  1. Toast the bread.
  2. Spread 1 tablespoon of Nutella on each slice of toasted bread.
  3. Cover each Nutella-coated toast with the slices from 2 strawberries.

Makes 2 treats.

Hazelnut Chocolate Spread

As someone who grew up with a sister addicted to Nutella, I find interesting the idea of being able to whip up a batch of the decadent chocolate-hazelnut spread within just a few minutes.

Ingredients:

  • 2 cups raw hazelnuts
  • 1 cup confectioners’ sugar
  • ½ cup unsweetened cocoa powder, such as Scharffen Berger or Ghirardelli
  • 3 tbs hazelnut oil, more as needed (could be vegetable oil, but flavor will be less intense)
  • ½ tsp vanilla
  • 1/8 tsp salt

Directions:

Heat the oven to 400 degrees.  Spread the hazelnuts evenly over a cookie sheet;  roast until they become aromatic, 8-10 minutes.  Transfer the nuts to a damp towel; rub to remove the skins.  Grind the hazelnuts to a smooth butter in a food processor, scraping the sides as needed, about 5 minutes.

Add the sugar, cocoa, oil, vanilla and salt to the food processor;  process until blended to the consistency of creamy peanut butter, about 1 minute.  If it is too dry, process in a little extra hazelnut oil.  Remove to a container;  cover. Refrigerate until needed.  Let come to room temperature before using.  It will keep for at least a week.

Makes: 1 ½ cups
