Two Cheese Baked Macaroni

I love making big batches of marinara sauce and freezing some for easy weekday dishes. I took out 2 cups of sauce from the freezer and added it to some cooked ground beef, combined that with leftover Ricotta cheese and the recipe came together in the time it took to boil the macaroni and it’s tasty and satisfying….and cheesy.

Ingredients:

  • ½ pound macaroni pasta (I use Delverde brand)
  • 2 Tbsp. olive oil
  • 1 pound ground beef, I use 20% fat
  • Pinch of salt and pepper
  • 2 cups Easy Marinara Sauce (or other marinara sauce)
  • ½ cup Ricotta cheese
  • I cup grated Mozzarella cheese

Directions:

  1. Preheat oven to 400 degrees.
  2. Cook pasta 1 minute short of the directions state on the packaging.
  3. In a large sauté pan over medium-high heat, warm the oil. Add the beef, the salt and the pepper and cook, stirring frequently, until the meat is no longer pink, about 5 minutes. Lower the heat to medium and add the sauce. Cook for about 10 minutes, stirring occasionally.
  4. Add the cooked pasta and the Ricotta to the sauce and gently toss to combine. Place the pasta in a baking dish, top with the Mozzarella and cook for about 15 minutes, until the cheese is melted and golden brown.

Makes 2 generous entrée-size servings.

Marinara SauceMy local grocery store had beautiful, organic Roma tomatoes this morning so I was inspired to make a light marinara sauce to complement my Almost Guilt-Free Individual Eggplant Parmesan.

The quick recipe calls for a food processor, but if you don’t have this handy kitchen appliance, use a blender or hand-chop the tomatoes.

Ingredients:

  • ¼ cup olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • ½ tsp. each salt, pepper, dried basil and sugar
  • 8 Roma tomatoes, pureed in the food processor
  • ¼ cup chopped fresh basil

Directions

  • Heat the olive oil in a medium saucepan over medium heat, add the onion and sauté for about 4 minutes. Add the garlic and continue cooking for another 2 minutes, stirring occasionally. Add the salt, pepper, dried basil and sugar and cook for 1 more minute.
  • While the onion/garlic mixture is cooking, place the tomatoes in a food processor and pulse for about 30 seconds or until mostly liquid with a few small tomato pieces.
  • Add the pureed tomatoes to the onion mixture in the saucepan and simmer over medium-low heat for 20 minutes, stirring occasionally.
  • Add the fresh basil right before serving.

Make about 3 cups.

Notes: Finished sauce can be cooled, placed in airtight containers and frozen for a month. It can also be refrigerated for 3 days.

Fresh Mozzarella Stuffed Arancini

Fresh Mozzarella Stuffed Arancini

Gooey, cheesy core, creamy risotto and crunchy, deep-fried outer shell. Seriously, how could this concept ever be bad?! Introducing the Arancini. I order this Italian favorite nearly every time a restaurant offers it and I love to use leftover risotto to make my own at home.

While the Arancini can be stuffed with just about anything (ground meat, various cheeses, grilled vegetables, short rib meat), this simple version showcases fresh Mozzarella.

Ingredients:

  • Vegetable oil for frying
  • ½ cup freshly-grated Parmesan cheese
  • 1 large egg, beaten in a small dish
  • 2 cups leftover risotto, cold from the fridge
  • 4 small fresh Mozzarella balls (Bocconcini)
  • 1 ½ cups Panko bread crumbs
  • Sea salt

Directions:

  1. Add enough vegetable oil to a small saucepan to fill it a little less than half full – should be about 3” of oil. Heat the oil to 350 degrees on medium-high heat, about 4 minutes. If you don’t have a deep-frying thermometer, the oil is ready when some bread crumbs thrown in it immediately fry up and brown but don’t burn.
  2. Add the Parmesan and the beaten egg to the risotto and combine well with fingers or a wooden spoon to fully incorporate.
  3. Divide the risotto in four portions. Shape a portion into a ball and insert a Mozzarella ball in the center of the rice. Reshape risotto over the Mozzarella to ensure the cheese is fully covered. Repeat with three remaining portions.
  4. Roll the four rice balls into the bread crumbs to fully coat.
  5. Working in batches of two, carefully add the rice balls to the hot oil and cook until golden brown, about 5 minutes. Transfer the rice balls to paper towels to drain and sprinkle a pinch of salt on each.
  6. Serve hot with Easy Marinara Sauce.

Makes four Arancini.

When it comes to red pasta sauce, I like meaty ones with lots of simmering time and layers of flavor like my Quebec Meat Sauce and my Ragu alla Bolognese.  Some time though, I want a fresh, quick-to-prepare, light sauce and this Easy Marinara Sauce fits the bill.

This tasty sauce can be used as a dipping sauce for bread or mozzarella sticks, can be tossed with spaghetti or can be used to simmer Oven Baked Veal Meatballs in.  However you use it, your dinner guests are certain to enjoy it.

Ingredients

  • 1/4 cup olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1/2 tsp. each salt, pepper , red pepper flakes and sugar
  • 2 (28-ounce) cans peeled plum tomatoes
  • 2 Tbsp. flat leaf parsley, chopped

Directions

  1. Heat the olive oil in a large saucepan over medium heat, add the onions and cook for about 5 minutes, then add the garlic and continue cooking for another 2 minutes, stirring occasionally.  Add the salt, pepper, red pepper flakes and sugar and cook for 1 minute more.
  2. Meanwhile, add the tomatoes to a food processor (or crush them by hand) and pulse for 1 minute.  Add the tomatoes to the onion mixture in the saucepan and simmer on medium-low heat for 30 minutes, stirring occasionally.
  3. Add the parsley right before serving.

Make about 4 cups.
