Creamy Chicken Noodle Soup

At our home, we love soup. If we’re connected on Facebook or Instagram, you’ll see lots of soup pics, especially in the winter. I’m Canadian and my guy is Dutch, two countries big on soups, and while we each have favorites, this Creamy Chicken Noodle Soup is one we both love.

Every so often when I have a few hours of downtime in the house, I’ll simmer or roast a whole chicken and then take the meat off the bones and bag individual portions and freeze for quick weeknight meals and for soup. For this soup, I do a double bag, about two cups. I’ll then simmer down the chicken carcass and make broth that I also freeze for future use, like this soup.

In this soup, you could use leftover rice or pasta for a great way to clear up the fridge with no waste. I often use linguine or fettucine. If you don’t have a blender/stick blender, simply skip that step and you’ll have a lovely soup that’s a bit chunkier. The soup gets its lovely coral color from the cooked carrots.

Ingredients:

  • 2 Tbsp. vegetable oil
  • 3 medium carrots, diced
  • 1 medium yellow onion, diced
  • 4 stalks celery, diced
  • 2 garlic cloves, minced
  • 8 cups low-sodium chicken broth
  • 1 tsp. each dried thyme, salt and pepper
  • 1 cup heavy cream combined with 1 Tbsp. cornstarch
  • 2 cups diced/shredded roasted chicken
  • ¼ pound linguine, broken into 2” pieces

Directions:

  1. In a large stockpot warm the oil over medium heat. Add the carrot, onion and celery and sauté until tender, about 10 minutes, stirring occasionally. Add the garlic and continue cooking for another minute.
  2. Add chicken broth, thyme, salt, pepper and cook for 10 more minutes.
  3. Add half the soup to a blender (or use a stick blender) and purée for about a minute. Return the puréed soup to a clean saucepan and purée the second half of the soup and add to the 1st batch of puréed soup.
  4. Turn the heat to medium and add the cream/cornstarch mixture to the soup. Bring to a simmer and cook/stir for 3-4 minutes until the soup has thickened.
  5. Add the pasta, lower heat to medium-low and cook 10-15 more minutes, until the pasta is cooked through. If using cooked pasta or cooked rice, reduce the cooking time to 2 minutes instead of 10-15 minutes just to reheat the cold pasta/rice.

Serves 6 generously.

While baked chicken recipes can be boring and sometimes even bland, this easy weeknight Cheesy Bacon Chicken Bake recipe is just the opposite.

It came to me as we were trying to empty our freezer and fridge before our move out of state. We had some chicken breasts in the freezer, that I thawed, and a block of cream cheese and some pre-cooked bacon to use up, so the Cheesy Bacon Chicken Bake was born.

This low carb recipe comes together in mere minutes and is perfect for weeknights or an easy weekend dinner. You could add things like cubed ham instead of bacon or add cooked spinach or cooked mushrooms and it would be delicious. The shredded cheese you use can also be changed to Swiss or Colby or Jack, or whatever you have on hand.

The chicken can be served with rice or a side salad for those living the keto life.

Ingredients:

  • 4 boneless, skinless breasts halves, sliced in half horizontally (you’ll have 8 pieces)
  • 1/3 cup mayonnaise (I used Duke’s)
  • 8 ounces cream cheese, softened
  • 2 cups shredded sharp Cheddar cheese, divided
  • ½ tsp. each salt, pepper and garlic powder
  • 8 slices cooked bacon, chopped into bite size pieces
  • Chopped scallions, optional

Directions:

  1. Preheat the oven to 375 degrees.
  2. In a rectangular baking dish (I used an 11’x7” Pyrex) place the chicken breasts in an even layer (a bit of overlap is fine).
  3. In a medium bowl, combine the mayo, cream cheese, 1 cup shredded Cheddar, the spices and chopped bacon.
  4. Top the chicken with the cheese/bacon mixture then top that with the rest of the Cheddar.
  5. Bake for 35-40 minutes or until the internal temperature of the chicken is 165 degrees and the cheese has melted and is lightly golden.
  6. Garnish with the scallions, if using.

Serves 4.

Easy Cobb Salad

Easy Cobb Salad

Okay, this isn’t really a ‘recipe’ but I thought I’d share as it was delicious and simple to make. Through this pandemic, we’re been doing so much pasta and Italian food that one day I decided we had to do more salads and put this baby together for dinner.

I used ingredients I had at home so please customize your version to what you have and what you eat. Would be delish without chicken and bacon but with chickpeas and artichoke heats too.

Served and plated this way is soooo pretty and if you don’t toss it, each person can use the dressing he/she likes. I did my Easy Greek Vinaigrette and my guy did blue cheese dressing. To each his/her own!

This used a half head of iceberg lettuce and two half chicken breasts that I grilled. I know blue cheese crumbles are more typical of a Cobb, but I had a ton of fresh Mozzarella, so I used that. And I included my No Fail Hard-Boiled Eggs.

Grilled Paella

Paella, a traditional dish of Spain, is a favorite at my home in the summer time. The dish can feature a variety of proteins: seafood, fish, sausages, chicken….it’s very versatile.

With Lobster Tail Added

Since we’re huge fans of grilling, I’ve developed a fantastic paella version that I cook on my Weber charcoal grill with some wood chips for added smoky flavor.  

Don’t have chicken thighs but have chicken breasts? Don’t think twice, use what you have. Want to switch up mussels for clams, go ahead! Want to amp up the fish/seafood and skip the chicken and sausage….you get the gist, use what you’d like!

This version uses what we’ve come to like best. I cook the paella in my 12-inch cast iron pan and it’s the perfect size for two healthy eaters. This recipe can easily be doubled, just use a bigger pan.

Ingredients:

  • A handful of wood chips (Hickory is a good option), soaked in water for an hour
  • ¼  cup olive oil
  • ½ medium onion, peeled and chopped
  • 2 garlic cloves, chopped
  • 1 pound boneless and skinless chicken thighs, cut into bite-sized pieces
  • 4 links of fresh Chorizo or Andouille, cut in ½ inch thick slices
  • 1 ½ cups short-grain rice, such as Calasparra or Bomba (could use Arborio in a bind)
  • ½ tsp. saffron
  • ½ tsp. each salt and pepper
  • 1 cup clam juice
  • 1 ½ cups seafood broth (could use chicken broth)
  • ½ cup dry white wine (if you prefer to omit the wine, replace with an additional ½ cup chicken broth)
  • ½ cup chopped tomatoes
  • 1 pound large shrimp, peeled, deveined, tails removed
  • Dozen mussels or littleneck clams, cleaned
  • ½ lemon
  • 1 Tbsp. chopped flat leaf parsley (optional)
Andouille Paella
Paella Rice and Onion

Directions:

  1. If using a charcoal grill, heat the briquettes until half are gray-ashy, then add wood chips (if using a gas grill, heat to medium).
  2. Place a 12-inch cast iron pan (or similar size paella pan) over the fire and warm for 2 minutes.
  3. Heat the olive oil then add the onion and cook until softened, about 4-5 minutes, stirring occasionally.
  4. Add the garlic to the onions and cook for a minute.
  5. Add the chicken thighs and the sausage stir then cover the grill and cook for 3 minutes, stirring to ensure even browning. Remove the chicken and sausage and wrap in foil to keep warm.
  6. Add the rice to the pan and stir to coat in the oil, then cook for 4 minutes, stirring occasionally.
  7. Add the saffron, the salt and the pepper and stir to combine. Return the chicken and the sausage to the pan then add the three liquids and the tomatoes and stir well to ensure any browned bits are picked up. Bring to a simmer and cook 15 minutes, covered, NOT stirring to help create the lovely crust on the bottom of the pan called Socarrat.
  8. Add the shrimp, cover the grill and cook for 3 minutes.
  9. Add the mussels/clams, hinge-side down in the rice, cover the grill and cook for 3 more minutes.
  10. Remove the pan from the heat, squeeze a half lemon over the paella and sprinkle some parsley, if using.

Serves two.

Hearty Turkey Barley Soup

Hearty Turkey Barley Soup

This a rustic meal-in-a-bowl and perfect on a chilly winter day. It’s an easy way to use up turkey leftovers also.

Ingredients:

  • 2 Tbsp. vegetable oil
  • ½ medium turnip, diced
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 6 cups turkey stock, homemade ideally
  • 2 cups cooked turkey, cut into bite-sized pieces
  • 1 ¼ cups barley, rinsed and cooked to package directions
  • ½ tsp. each salt, pepper and dried thyme
  • 2 bay leaves

Directions:

  1. To a large skillet over medium heat, warm the oil. Add the turnip, carrot and celery and cook until softened, about 5 minutes, stirring frequently. Set aside.
  2. While the vegetables cook, bring the stock to a simmer in a large saucepan over medium-high heat. Add the turkey, the cooked vegetables, the barley, the salt, pepper, thyme and bay leaves. Simmer over medium-low heat for 45 minutes. Discard the bay leaves and serve.

Yields 6-8 servings.

Copycat Hooters Chicken Wings

My guy and I like Buffalo chicken wings and his favorites are the ones from Hooters (it’s about the wings, really lol). I’ve perfected their buffalo shrimp recipe (you must try them) and I think we now have a pretty great handle on their chicken wings.

This recipe is for medium spicy Buffalo chicken wings but just decrease the hot sauce if you prefer mild wings.

Buffalo Sauce Ingredients:

  • ¼ pound butter (1 stick)
  • 1 cup hot sauce (I use Frank’s)
  • 1 tsp. garlic powder
  • 2 Tbsp. lemon juice
Wings Coating

Wings Coating Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp. salt
  • ¼ tsp. black pepper
  • ½ tsp. cayenne pepper
  • ½ tsp. paprika
  • ½ tsp. garlic powder
  • 12 chicken wings (we use flats and drummettes)
  • Peanut or vegetable oil for frying
  • Blue cheese dressing, carrot and celery sticks, optional

Buffalo Sauce Directions:

  1. Melt the butter in a small saucepan over high heat. Add the hot sauce, garlic powder and lemon juice – whisk to combine. Set aside on low heat until ready to use.
Tossing Wings in Sauce

Wings Directions:

  • In a shallow dish (I use a pie plate), combine the flour, salt, black pepper, cayenne, paprika and garlic powder. Coat the wings in the flour mixture, place the wings on a platter and refrigerate for one hour. Coat wings again with the flour mixture (may have leftover flour mixture).
  • Add oil to a deep fryer and bring temperature to 375 degrees (could use a deep saucepan also). Add 6 wings and fry for 13 minutes for medium-sized wings or 15 minutes for extra-large ones. Place cooked wings on a wire rack for a minute to drain excess oil.
  • Pour the hot buffalo sauce in a large heat-proof bowl and toss the wings in the sauce.
  • Repeat frying, draining and tossing in the sauce the remaining 6 wings.
  • Serve with blue cheese dressing, carrot and celery sticks if using.

Makes a dozen wings.

Pickled Slaw Ingredients:

  • 1 cup rice wine vinegar
  • ½ cup sugar
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon celery seed
  • ¼ head red cabbage, shredded
  • 1 cucumber, thinly sliced

Ground Chicken Ingredients:

  • 1 large carrot, shredded
  • 1 tablespoon coconut oil
  • ½ small onion, grated
  • ½ teaspoon minced garlic
  • 1 pound lean ground chicken
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground ginger
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • ¼ cup chopped cilantro
  • 1 head Boston lettuce

Pickled Slaw Directions:

  1. Combine vinegar, sugar and honey in a saucepan and bring to a boil. Mix and remove from heat. Add salt, pepper and celery seed and add vegetables to hot liquid, mix well. Place in large resealable plastic bag and refrigerate at least 1 hour.

Ground Chicken Directions:

  1. Heat the oil in a large pan over medium heat. Add onion and garlic, cook for 1 minute. Add ground chicken, salt, pepper, allspice and ginger, soy sauce and honey, cooking over medium heat. When most of the liquid evaporates or it reaches an internal temperature of 165°F, it’s done. Remove from heat and mix in cilantro.
  2. Separate and wash lettuce leaves. Serve chicken and slaw inside lettuce cups. 

Serves 4.

Chicken Bites with Tarragon Dipping Sauce

These Chicken Bites with Tarragon Dipping Sauce are a great little dish to make when company comes over and you don’t want to slave over a hot stove at the last minutes.

Chicken BitesI make the tarragon dipping sauce the day before and keep it in the refrigerator until I’m ready to serve the dish. This saves some time and keeps you out of the kitchen and with your guests come party time.

The bites will please adults and children and I often double the recipe as they’re a huge hit at parties. You could make the bites a little ahead of time and fry just 8 minutes then reheat in the oven, or my favorite, the toaster oven, for 2-3 minutes right before you want to serve the bites.

Bites Ingredients:

  • 2 cups peanut oil
  • 4 boneless, skinless chicken breast halves, patted dry and cut in 1½ inch bites.
  • 1 cup bread crumbs
  • ½ cup grated Parmesan cheese
  • ½ tsp. poultry seasonings
  • ¼ tsp. garlic powder
  • ½ tsp. dry thyme
  • 1 cup buttermilk
  • ½ tsp. each salt and pepper (plus additional salt for seasoning the cooked chicken)

Dipping Sauce Ingredients:

  • 1 cup sour cream
  • ¼ Dijon mustard
  • ½ tsp. dry tarragon or 1 Tbsp. fresh tarragon
  • 4 drops of hot sauce
  • Pinch of salt and pepper

Bites Directions:

  1. In a heavy saucepan or ideally a deep cast iron pan, warm the oil over medium-high heat until the temperature reaches 350°F.
  2. In a medium bowl, combine the bread crumbs, Parmesan, poultry seasonings, garlic power, thyme and ½ teaspoon each of salt and pepper.
  3. In another medium bowl, add the buttermilk.
  4. Dip the chicken in the buttermilk, shake to remove excess and toss in the bread crumb mixture to fully coat each piece. Add the coated chicken to the oil and cook in batches for 10 minutes, or until golden brown. You don’t want to crowd the pan with too much chicken or the oil will drop in temperature and your chicken will get soggy from oil penetrating the chicken instead of cooking the exterior. Place cooked chicken on paper towels and season with a pinch of salt.

Dipping Sauce Directions:

While the bites cook, in a medium bowl, add all the ingredients and whisk well to fully combine. Serve with the bites.

Serves 6-8 as appetizers/hors d’oeuvres.

Top Dishes for Mardi Gras Celebrations

According to Wikipedia, Mardi Gras, also called Fat Tuesday, refers to events of the Carnival celebrations, beginning on or after the Christian feasts of the Epiphany (Three Kings Day) and culminating on the day before Ash Wednesday. Mardi Gras is French for “Fat Tuesday”, reflecting the practice of the last night of eating richer, fatty foods before the ritual fasting of the Lenten season.

I’ve always liked Mardi Gras. When I was a young child in Canada, my grandma used to dress my sister and me up in costumes and take us trick or treating on her street. Back then, kids dressed up just like for Halloween and collected treats.

Now that I’m an adult, the holiday is still centered on treats, in the form of actual food and I don’t miss a chance to celebrate with New Orleans-worthy dishes. Here are some of my top dishes for Mardi Gras celebrations.

Short Cut Creamy Chicken and Rice Soup

Creamy Chicken and Rice SoupCreamy chicken and rice soup has been a favorite of mine since my youth going to St Hubert restaurant in Quebec. St Hubert is a popular restaurant chain and the rice and creamy chicken soup it makes is pure comfort in a bowl.

This week as I was prepping for my pot of Sunday soup, I decided to make my typical chicken soup, creamy. Then I decided to replace the hand-cut spaghetti (popular at my home) with the rice from a boil-in bag. The result – velvety texture, big chicken flavor and hearty enough to almost use a fork to eat!

The “Short Cut” Part

I had leftover cooked chicken and homemade chicken broth in the freezer so I used that, but you could poach your own chicken to use or simply buy a rotisserie chicken at the grocery store and grab store-bought broth. I’m a big believer in taking shortcuts in the kitchen, especially when they result in the heaven-in-a-bowl that is this Creamy Chicken and Rice Soup.

Ingredients

  • 4 Tbsp. vegetable oil
  • 1 small yellow onion, diced
  • 2 medium-large carrots, diced
  • 3 stalks celery, diced
  • 1 garlic clove, minced
  • 6 cups low-sodium chicken broth
  • ½ tsp. each dried thyme and sage
  • 1 tsp. each salt and pepper
  • 2 cups diced roasted chicken
  • 1 cup heavy cream
  • 3 tsp. corn starch diluted into ½ cup cold water
  • 1 Uncle Ben’s Boil-In Bag rice packet, uncooked OR 2 cups cooked long grain rice

Directions

  1. In a large pot over medium-high heat, warm the oil. Add the onion, carrot, celery and sauté until tender, about 10 minutes, stirring frequently. Add the garlic and cook an additional minute.
  2. Add chicken broth, thyme, sage, salt, black pepper and chicken and cook for 10 more minutes.
  3. Add the cream and bring the soup to a simmer. Add the corn starch mixture and stir for 2 minutes until the soup has thickened.
  4. Add the uncooked rice, lower heat to medium-low and cook 15 more minutes. If using cooked rice, reduce the cooking time for 2 minutes.

Serves 6 generously.
